Pasta: it's what's for dinner.

 

This recipe is SO good!  It has so much flavor and is healthy too!  Broccoli rabe is a great source of vitamins A, C, and K, potassium, calcium, and iron.  If you've never tried it, you are in for a treat.  It is an Italian vegetable that has a taste like nothing you have ever tried before.  It is bitter but delicious. 

Broccoli rabe with white beans and orrichetti:

Take the leaves and flowers off of the stems of a bunch of broccoli rabe.  
Wash and dry.
Place in a large saute pan with 1 chopped shallot, 1 chopped garlic clove, salt, black pepper, and crushed red pepper flakes, and 2 cups of chicken stock.  Drizzle with 1/4 cup of extra virgin olive oil.  
 

This would be a good time to start the pasta water.  Make sure you add a handful of salt to the boiling water before you add the pasta.
When the water is boiling, add your orricheti.


Saute until the rabe is wilted.  
Add 1 can of drained and rinsed cannellini beans.


Strain the pasta and toss with olive oil.  
Spoon the sauce over the pasta and top with Parmesan cheese.
