Recipe: pea and mint soup.

Another classic I've never tried: pea soup.  It's another super easy one.  Here goes:

In a large soup pot, saute 2 chopped leeks with 2 tablespoons of butter.  Once they are softened, add 4 cups chicken stock.  Bring to a boil and add 1 bag of frozen peas.  Wait 3 minutes, so the peas cook, and take off the heat.  Add salt, pepper, and 1/2 cup chopped fresh mint.  Using a hand held blender, puree the mixture.  Wisk in 1/3 cup creme fraiche.
