Recipe: alfredo with veggies and pasta.

 

This is a great one, and it's super fast.  This alfredo recipe makes enough for about 1/2 pound of pasta.

Saute your favorite veggies and put aside.  I love this with chicken, so I cook that up too!

 

In a large pan, saute thinly sliced scallions with 2 tablespoons butter and 2 tablespoons of olive oil.  Once the onions are translucent, add 1/4 cup white wine and reduce.
 

Pour in 1 pint of light cream and reduce slightly.

 

Remove from the heat and add salt, pepper, and Parmesan cheese.
 

This is so good with peas, too.  This would be the time to add them to the sauce and heat them through.

 

Toss the sauce with pasta and veggies and eat up!
