Recipe: roasted chicken salad with shallots and basil


I know you will love this quick and easy lunch!  I thought it was going to be good, but not AS GOOD as it was!
Ingredients:
the meat of 1 roast chicken, chopped
2 shallots, sliced thin and sauteed with olive oil, salt, and pepper
1 bunch of fresh basil, chopped lightly
vegenaise (easier on the tummy, and the waist, and I promise you won't even be able to tell the difference)

In a large bowl, mix all ingredients together.  Season to taste with salt and pepper.
