As a follow up the my post yesterday, tarragon chicken salad is the perfect picnic sandwich. And it couldn't be easier!
Whisk together the following in the bottom of a large mixing bowl:
2 tablespoons vegenaise
salt and pepper
2 chopped scallions
2 teaspoons finely chopped fresh tarragon
Mix in:
The meat of 1 roasted chicken, diced
1/3 english cucumber, seeded and finely chopped
Combine and enjoy!
