Recipe: healthy chicken tacos.

Hope you all had a wonderful 4th of July!  As you may have read, the 4th of July is one of my most favorite holidays. Nothing beats a day on the boat in Duxbury Bay and fireworks in Plymouth harbor.


On to another favorite of mine: food. Here is a super yummy and healthy recipe for chicken tacos.

In a large plastic bag, marinate chicken breasts in olive oil, fresh cilantro, and the following spices:
chili pepper, oregano, cumin, paprika, garlic powder, and salt.
Zip the bag and massage marinade on the chicken. Let stand in the fridge for 1-2 hours. 

In the meantime, get the toppings ready:
Lime wedges
Sliced avocado,
Slice radicchio
cheddar cheese
chopped cilantro

Grill chicken and allow to rest for 5 minutes. Assemble all the goodies on a tortilla, and eat them up!
