I love humus, and never get tired of learning new uses for it. I have to thank my father in law for most, such as tomato sauce with humus, a recipe I'm sure I'll post about at some point.
His newest idea was humus salad dressing. Dressings can totally ruin the fact that you are eating a plateful of vegetables because they can be so loaded with fat and calories. Making your own is so easy and waaaaaay better for you.
I think the entire family fell in love with humus dressing over Christmas dinner this past year, and it didn't take long for my husband, and then myself, to put our own twist on it.

For the dressing, whisk together the following:
1 tablespoon fresh squeezed lemon juice
3 tablespoons extra virgin olive oil
pinch of dried oregano
salt and pepper to taste
2 heaping tablespoons of humus (I used tahini, but I bet any flavor would be awesome)
To make Gabe's version, omit the lemon juice and oregano and add 1-2 tablespoons of balsamic vinegar.
For the salad:
Leafy greens
Sliced cucumber
Cherry tomotoes
Scallions
Feta cheese
Toss it with the dressing and enjoy the healthiness!
