Zucchini parmesan.

If you like zucchini, marinara sauce, and Parmesan cheese, you have to give this baked dish a try!

Preheat the oven to 350ยบ.

Thickly slice zucchini. (I used 2 zucchini for a 5" round baking dish)

Saute zucchini in olive oil and season with salt and pepper.  Flip once.

These look done.

Place on paper towels after cooking to drain off excess oil.

Spray nonstick spray on a baking dish.

Coat the bottom with a thin layer of marinara sauce.

Put a layer of zucchini over the sauce and sprinkle with parmesan cheese.  Repeat sauce, zucchini, and cheese layers until you get about 1/2" from the top edge of the dish with the sauce as your top layer.

 Sprinkle a final layer of cheese, top with black pepper, and drizzle with olive oil.  Bake until the sides are bubbly and the top is golden brown, about 30 minutes.

Resist the temptation to cut into it right away.  Let it sit for 10 minutes before you go at it, or it will loose it's shape and spread out.  Serve over your favorite pasta!  MMM!
