Tomato salad.

This is one of my faves in the summer, but I couldn't resist making it tonight!  Hope you enjoy this delicious salad!

For the dressing, whisk together the juice of half a lemon, 1/4 cup olive oil, oregano flakes, salt and pepper.  I usually make the dressing in the bottom of the serving bowl: one less bowl to clean.

On top of the dressing add 1 pint halves cherry tomatoes, thinly sliced red onion, and chopped cucumber.  Toss to evenly coast the veggies with dressing.

Add cubed feta cheese and gently toss again.

I think this would be SOOOO good with some orzo, but haven't tried it yet.
